The Kimchi Variations

If you visit Seoul and like your kimchi, you might notice that it's just a little less red than the vacuum-packed International Standard Kimchi (ISO2839) found all across the globe.

That's because the redness of kimchi is graduated from super-red on the southern tip of the penninsula, to a near-white shade at north Korea's border with China. Apparently the variation is caused by different types of chilli rather than differing quantities.

So there you have it.
